Who knew it all got so much more complex? No one. That is the answer, so here's a cheat sheet.
IMF or intermolecular forces are what causes molecules to stick together. For example, water can fit the most drops on the penny. Oil can hold the least. If the liquid is greasier then there is no internal surface grip formed by a bond, so it takes less drops to spill off the side of a penny. It is possible because a hydrogen bond is created with H of one molecule and the O of another. This is different from mineral oil. Mineral oil shifts electrons in an induced dipole bond or a Van der Waals force (also called London Dispersion forces). This happens when the electrons are unbalanced within the molecule creating attractions that shift due to the changing electron patterns. This means that breaking apart water molecules is quite difficult, whereas oil is not due to the non-polar bond.
